Live Hummus

There are an amazing number of hummus recipes on the Internet, and everyone who makes it has their own variation.  Traditional hummus is made from chickpeas, which for a Live Vegan, can be bit tricky to spout.

First, there is the 24 hour soak time, then rinsing every few hours because they tend to sour quickly.  So unless one is an experienced sprouter and has worked with chickpeas before, it may be best to try hummus alternatives.  Second, unless one is using a Vitamix, chickpeas hummus has a grainy texture and tends to sit heavy on the stomach.

Here are two of my favorite recipes.

Macadamia Hummus

3 cups macadamia nuts, soaked 2-4 hours

¼ cup lemon juice

3 Tbs olive oil

½ cup raw tahini

1 tsp sea salt

1 ¼ cups water (add more for a smoother outcome)

1 small clove garlic

Zucchini Hummus

2 zucchini, peeled and chopped

¾ cup raw tahini

½ cup fresh lemon juice

¼ cup olive oil

4 cloves garlic, peeled

2 ½ tsp sea salt

½ Tbs ground cumin

I highly recommend both these un-cook books.  The recipes are easy and elegant, and I rarely change the ingredients.

    Hummus: well I never really cared for the way it tasted but I have to say I was intreagued by the recipe. I have to say the Zucchini Hummus made me want to give it a second try. Thanks for sharing.
